This usually takes 2 - 4 days. Standard roasting days are Tuesday and Thursday but might vary on occasion.

Sourcing with Care

The endless pursuit of great coffee

Coimbra Farm is run by Sergio Reis Nogueira in Nepomuceno, in the South Minas region of Brazil. The farm spans around 250 hectares, with roughly 80 hectares dedicated to coffee, and grows varieties including Mundo Novo, Arara, Catuai, and Acaia.

Sergio Reis is known in the region for his steady, quality-focused approach to coffee production. Coimbra Farm is now in its third generation of family ownership, and that long continuity shows in the way the farm balances consistency, careful management, and a clear commitment to specialty coffee.

Sustainability also plays a real role on the farm, from integrated pest management and organo-mineral fertilisers to renewable energy, carbon-neutral initiatives, and the preservation of conservation areas, springs, and local wildlife.
