When we opened...

We set out to create a place where we could share our love for coffee and hospitality. Somewhere that felt easy to be in; warm, welcoming, and thoughtful.

Ridderstraat gave us that chance. Right in the heart of ’s-Hertogenbosch, a city that knows good food and drink, we’ve built something we’re proud of. A café that many of our guests, and our team, see as a second home.

It’s the kind of space we always hoped to offer. And we’d love for you to experience it.

Matcha

At Fortin, matcha is more than just part of our menu. It’s something we’ve been perfecting for years. After our first sip of true Koicha, we were hooked. The flavor was rich and full-bodied, the experience unlike any other, and we knew we had to bring that same quality to our guests.

We source our matcha from Kagoshima, a region in southern Japan renowned for its fertile shirasu soil. Known for its Sencha, Kagoshima’s matcha producers have elevated the craft, offering a cup with a delicate balance of sweetness, earthiness, and a smooth umami finish.

Every cup of usucha matcha at our cafés is made with care. We use traditional bamboo chasens, follow authentic techniques, and focus on every detail to ensure the perfect serving. It’s a process we’ve honed over the years, and one that we’re proud to share with fellow matcha lovers.

We’d be delighted to welcome you to Fortin.

Our menu brings timeless classics; espressos, cappuccinos, lattes... Each prepared with precision and care by our specialty trained baristas. We work exclusively with specialty coffee, and every cup is made using fresh Jersey milk or one of your selected plant-based alternatives.

While we take pride in serving up the best the familiar tastes, we also enjoy offering something a little more unexpected. Our signature drinks, completely created in-house, change with the seasons. Right now, they’re tuned to summer: refreshing, expressive, and just a little playful.

Here are a few we’d love for you to try.

Melbourne Magic
A double ristretto topped with silky Jersey milk, served in a 150ml cup. Bold, smooth, and perfectly balanced. Inspired to us by visiting guests from Melbourne, and a classic staple on our menu ever since.

Strawberry Fields
A matcha combination with our home made puree, made from fresh strawberries, rose peddles and vanilla. A delight done right, only using the best ingredients we could find.

Yuzu Espresso Tonic
Only few drinks are as loved among our staff like Espresso Tonic is. So we just knew to take it to the next level this year. A Yuzu extract that we've been developing for months is finally done and pairs perfectly with this classic.

Cherry Tea
We've been loving the Cascara coming in lately-the dried fruit of the coffee cherry. It's great as tea, but we wanted something that really says summer '25. So we mixed it with tonic, hibiscus, and mint. The result? Bright, crisp, and just the right kind of unexpected. Summer, in a glass.
