Our Coffee

At Fortin, the process begins long before the roast. We work directly with trusted producers and importers to source green coffee of specialty quality. Every lot we select is shaped by origin, elevation, climate and the skill of the grower. It must meet our sensory standards and reflect the unique character of place.

Once the coffee arrives at our roastery, the work continues. We roast in small batches, adjusting curves and profiles until the balance feels right. Sweetness, structure, clarity. Nothing is rushed, only serving up what we think is right. Each roast is the result of careful testing, cupping and refinement. Before any coffee reaches the bar, our team of baristas comes together to calibrate. We develop precise recipes for every brew method, tuning in temperature, dose and extraction. Only when we have dialed in each variable do we begin to serve. This is how we ensure that every cup reflects the intention behind it, from farm to roast to brew.

We are open about our process. Curious drinkers receive a card with every coffee, detailing the recipe followed. From grind size to brew time, we share everything so the experience can be understood, repeated or reimagined at home.

Alongside our regular coffees, we rotate through seasonal offerings. New farms, new varietals, new processes and even new roasteries. Every addition is a chance to explore something different and to celebrate the people behind it.

Rules to live by

We take specialty coffee seriously, but we’re here to make it simple for you. We solely use single origin coffee in our cups, that we roast and source with care. We always make sure to include all types of flavour tones with our bean offerings, to make sure that we can always produce a coffee that fits your expectation of the perfect cup.


There are a few rules we live by whilst sourcing.

  • Specialty coffee starts at 80 points on a 100-point scale. We set the bar higher, choosing only coffees that score 85 and above. Quality like this is what makes every cup at Fortin stand out
  • The majority of our coffee is certified organic. In cases where certification is not yet available, such as certain single-origin regions, we carefully select partners who demonstrate a strong commitment to sustainable farming and environmental responsibility.
  • It's our responsibility as sourcer, to ensure that farmers receive a liveable wage.
  • We keep our chain small, so we know our partners personally and work with them as a team.
