Flavour profile & Process

This lot is built around Tuang Coffee’s dark room fermentation approach. After the cherries are checked for ripeness at the processing site, they are packed into lined bags and turned regularly before being moved into a dark room, where the fruit can ferment in a more controlled environment away from heat and direct light. That extra control helps push the coffee toward deeper sweetness, layered fruit, and a more expressive cup without losing structure.

After fermentation, the cherries are dried slowly over six to eight weeks, then rested before hulling, hand sorting, and bagging. It is a process that takes time, but that patience is a big part of why this coffee feels so vivid and distinctive in the cup.

The endless pursuit of great coffee

Tuang Coffee works out of Ruteng in the Manggarai region of Flores, where coffee has long been grown but was often blended away into larger Indonesian bulk lots. Since 2014, Andre Tuang and his team have focused on building a stronger market for coffee from this area and on paying closer attention to quality at farm level and during processing.

Today the organisation works with a large network of growers across village communities around Ruteng, including Nati, Mbohang, and Gulang. Coffee grows here alongside crops like ginger and clove, and the combination of altitude, spacing between trees, and careful organic soil practices helps produce coffees with structure, fruit, and freshness.
