Flavour profile & Process

A clean natural from the Qawale smallholder project in La Libertad, Huehuetenango. Dark fruit and praline sweetness, with redcurrant keeping the finish fresh.

Sourcing with Care

The endless pursuit of great coffee

El Panal comes from the Qawale project in La Libertad, Huehuetenango. The lot is built from smallholder producers working to the same quality standard, with support from Vides58.

The name means honeycomb, and the coffee has that same sense of many small parts coming together: individual farm lots, careful patio drying and a cup that lands on praline, blackberry and redcurrant.

The Making of Great Taste

All about Boo Coffee Roasters

Boo! launched their roastery in 2024 in Brussels (Anderlecht), inside the COOP building — a refurbished former factory designed to support the growth of small and medium-sized enterprises. From the beginning, their mission was clear: to showcase what they believe Modern Coffee should be.

For Boo!, that means making both their brand and their coffee as approachable and inclusive as possible. They believe that in order to grow the specialty coffee industry, a shift in how it's typically presented is essential — moving away from exclusivity and toward openness.

Equally important to them is how they source their coffee. Boo! aims to work directly with producers whenever possible, minimizing intermediaries in the supply chain. Transparency and long-term relationships are at the heart of how they operate.

They’ve built Boo! on these core values, with a commitment to continually making the specialty coffee world a better, more accessible place.

That’s why we’ve chosen to work with them — because they’re not only focused on quality, but also on building a coffee culture that’s fair, inclusive, and forward-thinking.
