Unique Coffee

Flavour profile & Process

Freshly harvested cherries are delivered to the station without delay to preserve their quality. Upon arrival, farmers sort out under- and overripe cherries under the guidance of the station manager. Once sorting is complete, pulping begins after the day’s deliveries, followed by a 24-hour dry fermentation process. Clean water from the Rwamuthambi River—fed by the Mt. Kenya forest—is then used to wash away the mucilage. The parchment is soaked for six hours and carefully dried on raised beds.

Each stage is closely managed to ensure Mugaya’s coffees remain clean, vibrant, and expressive. Over 90% of the coffee grown by Mugaya members is made up of SL28 and SL34—renowned heritage varieties that thrive in the area’s cool climate and fertile volcanic soils. Smaller plantings of Batian and Ruiru 11 offer added disease resistance and introduce nuanced layers of complexity.

Since its founding in 1975, it has thrived thanks to strong cooperative support and a prime location at the base of Mt. Kenya, where rich volcanic soil and high elevation create ideal conditions for producing outstanding coffee.
