This Wush Wush underwent a Natural Bag Fermentation, an experimental method that enhances complexity and amplifies fruit-forward flavors. After selective harvesting, the cherries were fermented in sealed bags—creating a controlled anaerobic environment that allows native microorganisms to work their magic. This technique brings out the full potential of the variety’s floral and juicy profile.

Though labor-intensive and challenging, this process—combined with Huila’s microclimate and Luis’s expert handling—produces an expressive cup that is both clean and wildly aromatic.

Luis Aníbal is a pioneer in the Colombian specialty coffee scene.
While others prioritized volume, he focused on quality and
experimentation, especially with rare varieties like Wush Wush. His
approach has turned Villa Betulia into a regional benchmark, attracting
farmers eager to learn from his methods and source seeds from his
fields.

This coffee was sourced through direct trade, in partnership with Fred Bertolone
of Plurilateral Solutions. Since 2017, Fred has built strong
relationships with Colombian producers, ensuring traceability and better
returns for farmers. He's now one of Grounds sourcing and logistics
partner in Colombia.

All about Boo Modern Coffee

Boo! launched their roastery in 2024 in Brussels (Anderlecht), inside the COOP building — a refurbished former factory designed to support the growth of small and medium-sized enterprises. From the beginning, their mission was clear: to showcase what they believe Modern Coffee should be.

For Boo!, that means making both their brand and their coffee as approachable and inclusive as possible. They believe that in order to grow the specialty coffee industry, a shift in how it's typically presented is essential — moving away from exclusivity and toward openness.

Equally important to them is how they source their coffee. Boo! aims to work directly with producers whenever possible, minimizing intermediaries in the supply chain. Transparency and long-term relationships are at the heart of how they operate.

They’ve built Boo! on these core values, with a commitment to continually making the specialty coffee world a better, more accessible place.
