At Fortin, we roast and serve specialty coffee with obsessive care. Sourcing at origin, crafting with precision, and sharing it in our cafes in Den Bosch.
Ethos.
We begin at origin. Together with our partners, seeking out coffees of specialty quality and character, shaped by soil, climate and the precision of producers we trust. Each batch is roasted in small quantities at our roastery, with an obsessive attention to detail that honors the journey from farm to us. In our cafes, this care continues, through contemporary brewing, warm minimalism and a belief that every cup can express something singular.

Throughout everything that we do, we employ best practices. Whether this means only pulling double shots, always using fresh milk for each cup or only using Jersey Milk; you can be guaranteed of our quality first approach. Matcha
At Fortin, matcha is more than just part of our menu—it’s something we’ve been perfecting for years. After our first sip of true Koicha, we were hooked. The flavor was rich and full-bodied, the experience unlike any other, and we knew we had to bring that same quality to our guests.
We source our matcha from Kagoshima, a region in southern Japan renowned for its fertile shirasu soil. Known for its Sencha, Kagoshima’s matcha producers have elevated the craft, offering a cup with a delicate balance of sweetness, earthiness, and a smooth umami finish.
Every cup of usucha matcha at our cafés is made with care. We use traditional bamboo chasens, follow authentic techniques, and focus on every detail to ensure the perfect serving. It’s a process we’ve honed over the years, and one that we’re proud to share with fellow matcha lovers.

Bakery
At the core of our philosophy is a deep respect for the raw materials we use, just as we do in our roastery and cafe. We understand that the foundation of great products lies in the quality of ingredients, but it’s equally about the people behind them. The farmers, millers, and artisans who dedicate their expertise to crafting the finest raw materials are essential to everything we do. Their skill and dedication are woven into every product we create.
Flour, for example, is never just a commodity to us. Each batch we receive carries with it the legacy of those who have carefully cultivated it, and we see it as our responsibility to honor their work in everything we bake. We aim to share their story with the final consumer, delivering their craftsmanship in the most transparent and authentic way possible.
By showcasing these ingredients with respect and care, we connect the maker to the consumer, ensuring that every pastry reflects the quality and passion that went into its creation. It’s a responsibility we take seriously, one that guides everything we do in our bakeries. Troughout our bakery, we make as much as we can in-house. From our curds to our doughs, only buying from our partners what we cannot produce ourselves.
